I’ve had eight bowls of ramen on this trip. A few memorable, and some not so much. This gigantic bowl of ramen from Sapporo Ichiryuan was freakin’ outstanding ⭐️! Thick ass springy homemade noodles in a 7 year aged miso base broth, topped with alpine leeks only found in Hokkaido, chili soft scrambled eggs, a perfectly jammy boiled egg (extra), mizuna, sprouts, and a thick piece of tender, fatty pork shoulder. Such a unique and complex miso ramen. Truly one of the best that I’ve ever had. This was the perfect meal for our last night in Sapporo before we head back to Tokyo.
